Coccinea vegetable fry is very tastefully prepaid in the method shown below. this dish can be consumed with Roti, Chapati or Rice. this particular preparation is useful for diabetic patients.
- ½ kg coccinea vegetable (Dondi)
- 2 onion
- 6 Red chillis
- 6 Garlic cloves
- 1 spoon Cumin ( Jeera)
- ½ spoon Bengal gram, Chana Dal ( chickpea )
- ½ spoon split black gram
- ½ teaspoon Mustard seed (Avalu in Telugu, Rai in Hindi)
- 3 to 4 teaspoons Sunflower Oil
- 5 to 6 curry leafs
- ½ spoon turmeric powder
Preparation Method :
Take water in a bowl, add a little bit of salt and wash Coccinea (Dondi) neatly.
Then Cut the Coccinea (Dondi) as shown in the image below, cut one Coccinea (Dondi) at least four pieces or more.
Light the stove, take any vessel to prepare in, and put it on the stove. then pour two to three spoons of oil. let the oil be heated. then add ½ spoon split black gram, ½ spoon Bengal gram, Chana Dal ( chickpea ), ½ spoon Cumin ( Jeera), ½ teaspoon Mustard seed (Avalu in telugu, Rai in Hindi). Then roast it till it gets brown colour.
Then put pieces of coccinea vegetable to the vessel, roasted for 8 to 10 minutes till the pieces are cooked preferably in low flame.
Add ½ spoon turmeric powder and mix it to get colour before vegetables are cooked, and add some salt also for taste.
Preparation of Paste:
Put 6 Red chillis in the jar. add chopped onions to a jar. add ½ spoon Cumin ( Jeera), 8 to 10 Garlic cloves, add some salt also for taste. then make a paste of all the ingredients put in the jar.
Add the paste to cooked Coccinea Vegetable (Dondi) then cook for 2 minutes in a low flame. After that,the dish is ready to serve.
